Ogbono soup is one of Nigeria’s signature soup that has a syrupy slimy consistency, similar to okra but more thicker. There are many styles to cook this meal, some pair it with okra. This how i make mine.
Ingredients
½ Cup ground ogbono
Beef meat
Fresh mackerel fish
Smoked fish
Stock fish
Stock cubes
Habanero pepper
salt
Crayfish
2 Cooking spoons of palm oil
Spinach or other kind of vegetables
Directions
Clean the beef meat and stock fish, place them in a pot with water. Add stock cubes, place on heat and allow to simmer for 30 minutes.Continue below..
2. Clean the fresh fish and smoked fish, after 30 minutes have elapse, add the mackerel and smoked fish into the pot of simmering beef. Add more water and allow to cook more for 15 minutes.
3. Set the pot of meat aside when cooked. Place another pot on the heat, add the palm oil and allow to melt then turn off the heat. Add the ground ogbono to the heated oil. If your ogbono is lumpy like mine, do not worry because once it gets in contact with the oil, it dissolves. Stir in the ogbono into the oil, mix together then turn on the heat again. Stir fry the ogbono for one more minute then add the meat and the stock. Add more water if needed then add your crayfish, pepper and salt. Cover and allow the soup to simmer for about 20 minutes.
4. Add the vegetable and allow to simmer for 2 minutes then turn off the heat.
Serve with any swallow of your choice and enjoy.
