Its Christmas season once more......Oh yeah!!! The season of jollification, Giving, Sharing and Caring. During this time of the year, there's usually lots and lots of goodies to look forward to especially the food. Time and time again, i've had to ponder on what to prepare for christmas. So instead of pondering, i decided to outline popular simple Nigerian Christmas meal recipes & ideas to make this festive season memorable for family and friends. Where are the fans of the Nigerian fried rice…? Hehe. Here’s another way to make your fried rice more delicious with the “NIGERIAN EGG FRIED RICE”. The Nigerian egg fried rice is just like the normal fried but with the addition of egg which makes it much tastier. Here’s how to make it…
INGREDIENTS
•Eggs
Long grain rice
• Chicken or Turkey stock
Cow Liver
•Carrots
• Green Peas
•1 large Green pepper
•Onion bulb (popularly spring onion)
• Curry Powder
•Garlic Powder
•Vegetable Oil
•Maggi
•Salt (to taste)
STEPS TO MAKE THE EGG FRIED RICE
STEP 1: Wash all the vegetables
STEP 2: Dice the onion and set aside
STEP 3: Peel the carrots and cut into small cubes
STEP 4: Remove the seeds of the green peppers and cut pepper into small cubes
STEP 5: Pour the green peas and carrots in boiling water for 5 minutes, drain the water out and put in a bowl of cold water, then pour into a sieve and set aside.
STEP 6: Pour the chicken stock into a large pot and allow to boil for few minutes. Add the parboiled rice, Maggi, curry powder, garlic powder, onions and salt to taste. Leave to cook until it's done. You can add some water if the stock won't be enough to cook the Rice.
NOTE: Make sure the rice is not too hard or too soft.
STEP 7: while cooking the rice, separately break the eggs, add salt to taste, mix and Fry in a pan (make it round and flat) Allow to cool and dice the fried eggs.
STEP 8: Allow the vegetable oil to heat then add the carrots, peas, green pepper and diced liver and stir-fry for 1 min and then add little curry, Maggi. Mix together and add the diced eggs and pour into a bowl.
STEP 9: Pour the stir-fried mix into the frying pan, add the cooked rice and stir-fry for about 2 minutes.
STEP 10: the Nigerian egg fried rice is ready and could be served with fried chicken, fried plantain, beef etc…
